Three of my favorite things: Pork. Mexican food. And heat. These are all rolled into one amazing grilled pork chop. This recipe is perfect for outdoor grilling and I'll tell you why: If you grill that marinated-in-smoked-jalapenos pork chop indoors, you'll have to evacuate your kitchen due to a fit of coughing. Trust me on this one. It is worth it either way though ;) I'll also add that it's not too spicy. All three of my kids had seconds!
Chipotle-Lime Pork Chops - serves 2
2 pork chops
Marinade ingredients:
1 chipotle in adobo with sauce
juice of one lime
handful of fresh cilantro
1/4 c. olive oil
salt
fresh cracked pepper, coarse ground
In a small food processor, blend all marinade ingredients, leaving some texture.
Place chops and marinade into a ziplock bag and allow to sit in the fridge for one hour, or longer.
When the pork chops are ready, simply grill until just done. Enjoy! I served ours with an extra chunky version of my Chunky Guac [for lunch], grilled peppers and onions, and mashed sweet potatoes for the girls. It was delicious!
