Breakfast Skillet [with avocado and bacon]

This recipe came about on accident, as I imagine most probably do.  I was almost done cooking up a big breakfast of scrambled eggs, bacon, fried sweet potatoes, and sliced avocado.  I had to leave the kitchen for a minute so I asked Adam to monitor.  When I came back, for whatever reason, everything was in the skillet.  I was annoyed then, but after trying it, I was glad for the mistake!  It's now hands down, our family's favorite breakfast.  Thanks Adam ;)



Breakfast Skillet - makes 4 large helpings

You will need:
4 slices thick-cut bacon, or 6 regular slices
2 medium sweet potatoes, cubed
6 eggs
1-2 ripe avocados, chopped
salt and pepper to taste

In a large skillet, cook the bacon on medium heat until just starting to crisp.  Meanwhile, peel and cube the sweet potatoes.  When the bacon is done, set aside on a paper towel.  Keep the grease in the pan.

Turn the heat up to medium-high and add in the sweet potatoes.  Stir as little as possible to allow the potatoes to brown and crisp but watch closely as sweet potatoes burn easily.  When potatoes are browned, cover pan until they are fork-tender.

While the potatoes do their thing, scramble and cook the eggs.  Next, peel and chop the avocado(s) and bacon.  When everything is ready, mix it all together in your skillet, adding salt and pepper to taste.  Enjoy!
