I don't know about you but even before going Paleo, I had a hard time coming up with lunch ideas! Here I took inspiration from one of my favorite sandwiches: egg salad. I jazzed it up a bit with smoked salmon and set it atop a spring mix salad. The hardest part of this recipe is waiting for the eggs to cook!
Egg Sandwich Salad [with Smoked Salmon] - serves 2-4
6 hardboiled eggs, finely chopped
4(ish) ounces smoked salmon, flaked
2 ribs of celery, finely chopped
T Tbsp red onion, finely shopped (I like to use my food processor for the celery and onion here)
1/4-1/3 c. homemade mayonnaise, depending on how you like it
1 Tbsp dried dill
salt and pepper to taste
Mix ingredients well. I like to serve mine atop a nice bed of lettuce with a sprinkle of crushed sweet potato chips, and some fresh fruit on the side. Also good on top of sauteed kale for breakfast!
