Chunky Guacamole [for lunch] - serves 2
2 ripe avocados
1 tomato, finely chopped
1/4 of a cucumber, finely chopped
1/4 green bell pepper, diced
handful of cilantro, finely chopped
1 Tbsp finely chopped red onion
splash of evoo
juice of one whole lime
salt and pepper to taste
Mix all ingredients together.
For a satisfying Paleo lunch, serve this guacamole with sweet potato or plantain chips. Enjoy!
Yum! Love how you served it with sweet potato chips. I could certainly eat guacamole for every meal of the day :)
