An Island-Style-Paleo Recipe

This is one of my absolute favorite ways to have a burger.  Before Paleo I would definitely enjoy this on a nice crusty bun.  It's just as delicious without it though. 
Jerk Pork Burgers + Island-Style Coleslaw 
Paleo - serves 4

For the burgers:

1 lb ground pork
2 eggs
1/4 c. coconut flour
handful fresh cilantro, chopped
1 green onion, finely chopped
1 Tbsp. jerk seasoning, preferably homemade*
1 tsp. salt
pepper to taste
1-2 Tbsp coconut oil for frying

Mix all ingredients and form into 4 patties.  Heat oil in skillet on medium high.  When patties are browned on each side, turn heat low and loosely cover until burgers are just cooked.  Top with coleslaw and enjoy! 

For the coleslaw:

1 bag coleslaw mix
1/2 red bell pepper, finely diced
1 ripe mango, chopped
handful fresh cilantro, chopped
1 green onion, finely chopped
1/2 cup mango chutney, preferably homemade**
1/2 cup mayonnaise, preferably homemade**
1 tsp. jerk seasoning
salt and pepper to taste

Mix all ingredients and refrigerate for at least 10 minutes before serving.

*I always make my own seasoning blends.  I use the one linked, quadruple the recipe, sub the brown sugar with palm, and leave out the oil to keep the blend dry and readily available.

**I try to make as many of my condiments as possible.  I love being able to control the quality of ingredients and know what is going into our bodies.  Remember to read your labels!

  1. This dinner amazingly also is EXTREMELY popular with all the kids, which tend to be picky sometimes. I'll eat it anytime, too!
